Black Bean Salad

Black Bean Salad

Ingredients

  • 2-15 ounce cans black beans, drained

  • 1 green pepper, finely diced

  • 1 red pepper, finely diced

  • 1 yellow pepper, finely diced

  • 1 pound package frozen corn, thawed

  • ¼ bunch fresh cilantro, chopped

  • ¼ cup salsa

  • 3 Tablespoons olive oil

  • 3 Tablespoons lemon juice

  • 2 cloves garlic, minced

Directions

  • Combine all ingredients in a medium sized bowl and mix well.
  • Cover and refrigerate for 24 hours before serving.
  • Stir well before serving.
