Sweet Potato Delight

My mother-in-law went to Oregon and while driving through Nebraska, she picked up a cook book for me. I tried many of the recipes…and this one was my favorite. It’s a “must have” on every major holiday.

Sweet Potato Delight

Ingredients

  • 3 cups cooked, mashed sweet potatoes

  • 1 cup sugar

  • 2 eggs, well beaten

  • 1 teaspoon vanilla

  • ¼ cup milk

  • ½ cup butter

  • Topping
  • 1 cup packed brown sugar

  • 1/3 cup flour

  • 1 cup chopped pecans

  • 1/3 cup butter

Directions

  • Preheat oven to 350 degrees
  • Mix all ingredients together (except topping) and pour into a buttered casserole dish.
  • Mix topping ingredients together until crumbly and sprinkle over casserole.
  • Bake for 30 minutes.
  • *You can prepare this casserole for baking the night before. If you do, remove the casserole from the refrigerator an hour before baking. Then bake for 30-45 minutes (depending on how cold it was when you put it in the oven.
