My mother-in-law went to Oregon and while driving through Nebraska, she picked up a cook book for me. I tried many of the recipes…and this one was my favorite. It’s a “must have” on every major holiday.
Sweet Potato Delight

3 cups cooked, mashed sweet potatoes
1 cup sugar
2 eggs, well beaten
1 teaspoon vanilla
¼ cup milk
½ cup butter
- Topping
1 cup packed brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter
Directions
- Preheat oven to 350 degrees
- Mix all ingredients together (except topping) and pour into a buttered casserole dish.
- Mix topping ingredients together until crumbly and sprinkle over casserole.
- Bake for 30 minutes.
- *You can prepare this casserole for baking the night before. If you do, remove the casserole from the refrigerator an hour before baking. Then bake for 30-45 minutes (depending on how cold it was when you put it in the oven.
