This is my favorite filling for pierogi. Nice and tart with bits of bacon. If you prefer a less tart filling, rinse the sauerkraut before mixing with the other ingredients and drain it well.
Sauerkraut Pierogi Filling

1 large can sauerkraut
4 slices bacon
2 Tablespoons sugar
1 large onion, chopped
1 clove garlic, minced
Directions
- Cook bacon, remove from skillet and crumble.
- Remove all but 3 Tablespoons grease from skillet.
- Add the kraut, onion and garlic and sauté gently til browned.
- Add sugar and salt.
- Cool filling before stuffing.
- Fills 2-3 dozen Pierogis.
