Sauerkraut Pierogi Filling

This is my favorite filling for pierogi. Nice and tart with bits of bacon. If you prefer a less tart filling, rinse the sauerkraut before mixing with the other ingredients and drain it well.

Ingredients

  • 1 large can sauerkraut

  • 4 slices bacon

  • 2 Tablespoons sugar

  • 1 large onion, chopped

  • 1 clove garlic, minced

Directions

  • Cook bacon, remove from skillet and crumble.
  • Remove all but 3 Tablespoons grease from skillet.
  • Add the kraut, onion and garlic and sauté gently til browned.
  • Add sugar and salt.
  • Cool filling before stuffing.
  • Fills 2-3 dozen Pierogis.
