While visiting my local casino, I sat next to a pleasant lady and started to chat. After a while, we got on the subject of food and I mentioned my website to her. She asked where I get all my recipes from and I explained how some are old family recipes, some are from friends and others I find on other food websites. All of a sudden, she whips a recipe out of her purse. She went on to tell me how on the previous evening, she had dinner at a friends house and this was the dish she served. She remarked on how tasty it was, so her friend jotted down the recipe. I said, “well, don’t you want to keep it?”. She said no, she doesn’t cook anymore. Well, to cut a long story short, the next day I went to the store, picked up the ingredients and gave it a try. Both my husband and I really enjoyed it. The original recipe called for bread crumbs, but since I didn’t have plain ones in the house, I used two slices of sour dough bread that I crumbled up. I think the sour dough added a European twang to the dish, which I happen to love. I’m sure the plain bread crumbs will be just as tasty. Also, her recipe did not include the gravy, but when I saw all of that yummy broth and drippings in the skillet, I just had to make a gravy, which I spooned over both the patties and the egg noodles I prepared. I did a little search for Kotleti (also spelled Kotlety) and found that some claim its a Russian dish while others say its Ukranian. The lady who wrote down the recipe listed it as Polish, so Polish it is! Thanks Belle for sharing this recipe. Enjoy!!
Polish Meat Patties a.k.a. Kotleti

1 pound ground pork
1 pound ground beef
2 small slices sour dough bread, torn in bits OR ½ cup plain bread crumbs
½ cup milk
1 egg
4 slices bacon, finely diced
¾ cup onion, finely diced
3 Tablespoons butter, divided
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon ground marjoram
1 cup beef stock
½ cup flour
1 ½ Tablespoons corn starch
½ cup cold water
Directions
- In a large skillet, saute the onion in 1 Tablespoon butter until soft. Remove from flame and set aside to cool.
- In a separate bowl, combine the bread crumbs with the milk and let rest for 5 minutes.
- In a large bowl, combine the ground beef, ground pork, bacon, egg, salt, pepper and marjoram. Mix just until incorporated.
- Add the cooled onions and the bread crumbs and milk mixture. Mix well and form into 6 oval shaped patties.
- Dredge the patties in flour to lightly coat.
- Melt the remaining 2 Tablespoons butter in the skillet.
- Brown the patties on both sides.
- Pour the beef broth over the patties, cover and simmer on low heat for 30 minutes.
- After the 30 minutes, flip the patties, cover and simmer for another 30 minutes, adding small amounts of water if needed .
- 10. Remove the patties to a platter.
- 11. Make a slurry by combining the cold water and cornstarch in a cup. Whisk with a fork until the cornstarch has dissolved.
- 12. Add the slurry to the skillet with the beef broth remnants & stir until thickened.
- 13. Serve the gravy over the meat patties.
Notes
- I serve these patties with egg noodles and a veggie.
