Pecan Balls

This delicate, tender cookie with a hint of vanilla, is bursting with bits of pecans and is rolled in powdered sugar . One batch makes approximately 45 cookies.

Ingredients

  • 1 cup butter

  • 6 Tablespoons confectioners’ sugar, sifted

  • 1 teaspoon vanilla

  • 2 ¼ cups flour

  • ¼ teaspoon salt

  • ½ cup finely chopped pecans

Directions

  • Preheat oven to 400 degrees
  • Cream butter until light and fluffy.
  • Add 6 Tablespoons confectioners’ sugar and mix well.
  • Beat in vanilla.
  • Sift flour with salt and add to creamed mixture. Mix well
  • Stir in the pecans.
  • Shape dough into 1” balls.
  • Place 1” apart on ungreased cookie sheet (or a cookie sheet lined with parchment paper)
  • Bake for 10 to 12 minutes.
  • 10. Remove from oven and while cookie is hot, roll into confectioners’ sugar.
  • 11. Cool and sprinkle with more confectioners’ sugar if needed.
