This delicate, tender cookie with a hint of vanilla, is bursting with bits of pecans and is rolled in powdered sugar . One batch makes approximately 45 cookies.
Pecan Balls

1 cup butter
6 Tablespoons confectioners’ sugar, sifted
1 teaspoon vanilla
2 ¼ cups flour
¼ teaspoon salt
½ cup finely chopped pecans
Directions
- Preheat oven to 400 degrees
- Cream butter until light and fluffy.
- Add 6 Tablespoons confectioners’ sugar and mix well.
- Beat in vanilla.
- Sift flour with salt and add to creamed mixture. Mix well
- Stir in the pecans.
- Shape dough into 1” balls.
- Place 1” apart on ungreased cookie sheet (or a cookie sheet lined with parchment paper)
- Bake for 10 to 12 minutes.
- 10. Remove from oven and while cookie is hot, roll into confectioners’ sugar.
- 11. Cool and sprinkle with more confectioners’ sugar if needed.
