Peanut Butter & Kisses Cookies

Here’s another cookie from my “Christmas Cookie Collection”. It’s a tasty peanut butter cookie, rolled in sugar and topped with a big old Hershey’s Kiss. Which reminds me, one bag of kisses is plenty for this recipe as it yields approximately 50 cookies.

Peanut Butter & Kisses Cookies

Ingredients

  • 1¾ cups flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup butter (1 stick)

  • ½ cup peanut butter

  • ½ cup white sugar

  • ½ cup brown sugar

  • 1 egg

  • 1 teaspoon vanilla

Directions

  • Preheat oven to 375 degrees
  • Cream together the butter, peanut butter, and the sugars until light and fluffy
  • Add the egg and vanilla and mix well.
  • Add the dry ingredients and mix well.
  • Shape dough into ¾ inch balls and roll in sugar.
  • Place on ungreased (or parchment paper lined) cookie sheet and bake for 8 minutes.
  • Remove from oven and quickly, put a chocolate kiss in the center of each cookie, pressing firmly, causing cookie to crack around edges.
  • Return to oven and bake for 2 minutes longer.
  • Remove from oven and transfer to wire rack to cool.
