Open Faced Tuna Patty Melt

If you’re looking for a meatless meal that’s quick and easy to prepare, and is darn right delicious, look no further! This hearty sandwich is served “open faced”, but if you like a full sandwich, just toast another slice of bread and top it off! I generally use albacore tuna, but regular tuna works just as well. As for the cheese, you can use cheddar, swiss or whatever favorite melting type cheese you like.

Ingredients

  • 2 cans tuna

  • ½ cup celery, finely diced

  • ½ cup onion, finely chopped

  • 1 teaspoon dried dill

  • 1/8 teaspoon pepper

  • 1/4 teaspoon salt

  • ¼ teaspoon Old Bay seasoning

  • 2 Tablespoons lemon juice

  • 1 teaspoon soy sauce

  • ¾ cup mayonnaise

  • 4 slices bread, toasted

  • 1 cup shredded Gruyere cheese

Directions

  • Drain tuna, place in a bowl and break up the clumps with a fork.
  • Add the celery, onions, dill, pepper, salt, Old Bay, lemon juice, soy sauce and mayonnaise and mix well.
  • Place ¼ of the mixture on each piece of toast, spreading it to the ends.
  • Put ¼ cup of the shredded cheese evenly, on each “sandwich”.
  • Place on a baking sheet and broil for 2-3 minutes until cheese melts and starts to turn a golden brown.
  • Serve immediately.
