Knudson Coffee Cake

One of my old customers, Esther, shared this recipe with me over 30 years ago. It is such a wonderful cake, made in a tube pan. Your friends and family will be impressed when you serve this buttery cake.

Ingredients

  • ½ lb. butter

  • 1 ¼ cup sugar

  • 1 cup sour cream

  • 2 eggs

  • 2 cups flour

  • ½ teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla

  • TOPPING
  • 1/2 cup chopped pecans

  • 2 Tablespoons sugar

  • 1 teaspoon cinnamon

  • Cream butter and sugar. Add eggs and mix well. Add sour cream and vanilla. Mix well. Add dry ingredients and mix well. Put ½ of the batter into a greased 8 inch tube pan. Sprinkle with topping. Cover topping with remaining batter and bake at 350 degrees for 55 to 60 minutes.

Directions

  • Preheat oven to 350 degrees
  • Grease a 8 inch tube pan
  • Cream butter and sugar together until well incorporated
  • Add the sour cream and vanilla and mix well
  • Add the dry ingredients and blend well
  • Put half of the batter into the cake pan
  • Sprinkle the topping over the batter
  • Cover the topping will the remaining batter.
  • Bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean.
