One of my old customers, Esther, shared this recipe with me over 30 years ago. It is such a wonderful cake, made in a tube pan. Your friends and family will be impressed when you serve this buttery cake.
Knudson Coffee Cake

½ lb. butter
1 ¼ cup sugar
1 cup sour cream
2 eggs
2 cups flour
½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla

- TOPPING
1/2 cup chopped pecans
2 Tablespoons sugar
1 teaspoon cinnamon
Cream butter and sugar. Add eggs and mix well. Add sour cream and vanilla. Mix well. Add dry ingredients and mix well. Put ½ of the batter into a greased 8 inch tube pan. Sprinkle with topping. Cover topping with remaining batter and bake at 350 degrees for 55 to 60 minutes.
Directions
- Preheat oven to 350 degrees
- Grease a 8 inch tube pan
- Cream butter and sugar together until well incorporated
- Add the sour cream and vanilla and mix well
- Add the dry ingredients and blend well
- Put half of the batter into the cake pan
- Sprinkle the topping over the batter
- Cover the topping will the remaining batter.
- Bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean.
