Looking for an economical meal that’s savory, hardy and downright delicious? This recipe is sure to deliver. It’s quick and easy and so very flavorful. I recently was rummaging through one of my favorite recipe sites and came across this gem. Thanks to Beccabo73 for sharing her recipe. I tweaked it just a tad to suit my family’s taste.
Italian Sausage, Peppers & Potato Bake
Course: Casserole, Dinner, Main Dish – Pork3

2 teaspoons olive oil
2 lbs Italian Sausage Links, cut into 2 inch pieces (3 slices per link)
¼ cup olive oil
4 large potatoes, peeled and cut into 1 inch cubes
2 green bell peppers, seeds removed and cut into large chunks
2 red bell peppers, seeds removed and cut into large chunks
3 large onions cut into wedges
1 Tablespoon diced garlic
1 cup chicken stock
1 teaspoon Italian seasoning
Salt and pepper to taste
Directions
- Preheat oven to 400 degrees.
- Heat 2 teaspoons olive oil in a large skillet over medium heat. Cook the sausages until browned. Transfer the sausages to a large baking dish.
- Pour the remaining olive oil in the skillet and cook the potatoes until they are golden brown, approximately 12 minutes. Spoon the potatoes into the baking dish.
- Add the onions and peppers to the skillet and cook for 8 minutes. Add the garlic and cook 1 more minute. Transfer the peppers to the baking dish.
- Add the chicken stock to the skillet, scraping up all the little goodies and then add it to the baking dish’
- Sprinkle on the Italian seasoning, salt and pepper. Gently stir and put in the oven for 25 minutes.
- Serve with some nice Italian bread or hot bread sticks.
Notes
- The lady that shared this recipe uses 1/2 cup white wine and 1/2 cup chicken stock.
