Irish Soda Bread

It’s been about 10 years since I came upon this delicious soda bread recipe. A lady named Karin posted it on the All Recipes site and am I glad she did, because it is scrumptious and so easy to make. The only change I made was to add raisins, as that’s what my family likes. I think you’ll agree its wonderful with or without the raisins!

Ingredients

  • 3 cups all purpose flour

  • 1 Tablespoon baking powder

  • 1/3 cup white sugar

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 egg, slightly beaten

  • 2 cups buttermilk

  • ¼ cup melted butter

  • Generous handful of raisins (optional)

Directions

  • Preheat oven to 325 degrees.
  • Grease a 9×5 loaf pan.
  • Combine the flour, baking powder, sugar, salt and baking soda.
  • Blend the egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened.
  • Stir in the melted butter.
  • If desired, add raisins.
  • Spoon batter into the loaf pan.
  • Bake for 65 to 70 minutes or until a toothpick inserted in the bread comes out clean.
  • Cool on a wire rack.
  • 10. When cool, wrap in foil for several hours or overnight for best flavor.
  • NOTE***This is an important part of the process. It brings the flavor out and keeps the bread moist.
