It’s been about 10 years since I came upon this delicious soda bread recipe. A lady named Karin posted it on the All Recipes site and am I glad she did, because it is scrumptious and so easy to make. The only change I made was to add raisins, as that’s what my family likes. I think you’ll agree its wonderful with or without the raisins!
Irish Soda Bread

3 cups all purpose flour
1 Tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, slightly beaten
2 cups buttermilk
¼ cup melted butter
Generous handful of raisins (optional)
Directions
- Preheat oven to 325 degrees.
- Grease a 9×5 loaf pan.
- Combine the flour, baking powder, sugar, salt and baking soda.
- Blend the egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened.
- Stir in the melted butter.
- If desired, add raisins.
- Spoon batter into the loaf pan.
- Bake for 65 to 70 minutes or until a toothpick inserted in the bread comes out clean.
- Cool on a wire rack.
- 10. When cool, wrap in foil for several hours or overnight for best flavor.
- NOTE***This is an important part of the process. It brings the flavor out and keeps the bread moist.
