I came across this recipe in a church cookbook and figured I’d give it a try. It probably came off of a Bisquick box, as they had a series of “Impossible Pie” recipes years ago. This is not a gourmet, fancy pie, but a wonderful dessert for a quick treat with little effort to prepare. No rolling out pie crust…just put all the ingredients together in a bowl, mix it up and pour it into a buttered pie plate. Bake for a hour and you’ve got a coco-nutty slice of goodness, with the crust on the bottom, custard in the middle and luscious coconut on the top. Impossible Coconut Pie

4 eggs
1 cup sugar
2 cups milk
1 cup coconut (I used sweetened)
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup Bisquick mix
Directions
- Preheat oven to 350 degrees
- Mix all ingredients together in a bowl and beat until combined.
- Butter a 9 or 10 inch pie pl;ate
- Pour better into the pie plate
- Bake for 1 hour
- Remove from oven and place on a cooling rack to cool.
- Refrigerate until ready to serve
