This spunky sauce goes great with prime rib. I make it the day before so the flavors can meld properly. If you like lots of spunk, add more horseradish and if you prefer a more mild sauce, use less. (I recommend starting with 3 Tablespoons of horseradish and add more if desired.) We had some sauce left over, so I smeared it on a corned beef sandwich…yum!
Horseradish Sauce

¾ cup sour cream
4-5 Tablespoons prepared horseradish
3 Tablespoons mayonnaise
1 ½ teaspoon apple cider vinegar
1/3 teaspoon salt
1/3 teaspoon black pepper
3 Tablespoons chives, finely chopped
Directions
- Mix all ingredients together and refrigerate at least 24 hours before serving
