Just before graduation, one of my “study buddies” hosted a luncheon and this is one of the appetizers she served. Ham is not one of my favorite things, but I noticed the ladies were hovering over this dish, so I decided to try one, and then another, and another. They were spectacular. Ham & Cheese Pinwheels

Ingredients
2 puff pastry sheets, thawed
1 jar apricot preserves
½ pound thinly sliced ham
½ pound Swiss cheese, shredded
6 Tablespoons Dijon mustard
Directions
- Lay puff pastry sheets on a parchment paper lined work surface.
- Spread the pastry with the preserves and then the Dijon mustard.
- Sprinkle with the cheese and top with the slices of ham.
- Roll pastry tightly.
- Slice into ½ inch pinwheels and place on parchment lined cookie sheet.
- Chill for 15 minutes.
- Bake in preheated 400 degree oven for 10-15 minutes or until puffed and lightly golden.
