Ham & Cheese Pinwheels

Just before graduation, one of my “study buddies” hosted a luncheon and this is one of the appetizers she served. Ham is not one of my favorite things, but I noticed the ladies were hovering over this dish, so I decided to try one, and then another, and another. They were spectacular. Thanks Rosemarie for the recipe and for always being there!

Ham & Cheese Pinwheels

Ingredients

  • 2 puff pastry sheets, thawed

  • 1 jar apricot preserves

  • ½ pound thinly sliced ham

  • ½ pound Swiss cheese, shredded

  • 6 Tablespoons Dijon mustard

Directions

  • Lay puff pastry sheets on a parchment paper lined work surface.
  • Spread the pastry with the preserves and then the Dijon mustard.
  • Sprinkle with the cheese and top with the slices of ham.
  • Roll pastry tightly.
  • Slice into ½ inch pinwheels and place on parchment lined cookie sheet.
  • Chill for 15 minutes.
  • Bake in preheated 400 degree oven for 10-15 minutes or until puffed and lightly golden.
