Fried Potatoes

Each time I make BBQ ribs, I stress over what type of potatoes to serve with them. Potato salad? French fries? Scalloped Taters? So many choices, right? How about a side of homemade fried potatoes! It’s quick, easy and oh so delicious. The nice thing about this recipe is, you can change the spices you use to compliment the meat you’re serving. For example, if you’re serving Greek chicken, swap the Savory and replace it with Greek seasoning. If you’re serving these with Italian sausages, swap the Savory with Italian Seasoning. You can either peel the potatoes or leave the skins on! Did I mention I used to make these when we would go camping? They go great with burgers too!!

Ingredients

  • 4 large red potatoes, cubed (about 4 cups)

  • 1 cup diced onions

  • ½ cup diced green peppers

  • 1 Tablespoon minced garlic

  • 3 Tablespoons butter

  • 2 Tablespoon olive oil

  • ¾ teaspoons salt

  • ½ teaspoon black pepper

  • ¾ teaspoon Savory

  • Dash of smoked paprika

Directions

  • In a skillet, melt the butter.
  • Add the olive oil and stir we
  • Over medium heat, brown the potatoes in the skillet for 5 minutes.
  • Add the green pepper and onions and continue browning for another 5 minutes.
  • Add the garlic, salt, pepper, Savory and paprika. Brown for another minute.
  • Turn down the heat to low, cover and cook for 15 minutes or until the potatoes are almost tender.
  • Remove the cover, turn the heat back up to medium and fry just until the potatoes start to brown and crisp up.
  • Taste and add additional salt if needed.
