This is another one of my “Christmas Cookie Collection” recipes. This cookie is a pastel colored green cookie with mini chocolate chip morsels, and a delightful mint flavor. It is a meringue style cookie, that have a “sleep over”” in your oven. These cookies melt in your mouth!
Forget Me Not Mints

Ingredients
2 egg whites
Pinch of salt
½ teaspoon cream of tartar
¾ cup sugar
½ teaspoon vanilla
¼ teaspoon mint extract
1 pkg. mini chocolate chips
2 drops green food coloring
Directions
- Preheat oven to 350 degrees.
- In a bowl, mix 2 egg whites, a pinch of salt and the cream of tartar and beat until stiff peaks form.
- Slowly add sugar, vanilla and mint flavoring until combined.
- Fold in the chocolate chips.
- Stir in the food coloring.
- Drop onto greased cookie sheet.
- Put in oven and turn off the gas. Leave in oven overnight.
- In the morning, transfer cookies to an airtight container.
