Forget Me Not Mints

This is another one of my “Christmas Cookie Collection” recipes. This cookie is a pastel colored green cookie with mini chocolate chip morsels, and a delightful mint flavor. It is a meringue style cookie, that have a “sleep over”” in your oven. These cookies melt in your mouth!

Forget Me Not Mints

Ingredients

  • 2 egg whites

  • Pinch of salt

  • ½ teaspoon cream of tartar

  • ¾ cup sugar

  • ½ teaspoon vanilla

  • ¼ teaspoon mint extract

  • 1 pkg. mini chocolate chips

  • 2 drops green food coloring

Directions

  • Preheat oven to 350 degrees.
  • In a bowl, mix 2 egg whites, a pinch of salt and the cream of tartar and beat until stiff peaks form.
  • Slowly add sugar, vanilla and mint flavoring until combined.
  • Fold in the chocolate chips.
  • Stir in the food coloring.
  • Drop onto greased cookie sheet.
  • Put in oven and turn off the gas. Leave in oven overnight.
  • In the morning, transfer cookies to an airtight container.
