Double Crispy Chicken

Who doesn’t like crispy chicken? This juicy, lip smackin’ good chicken is smothered in crushed corn flakes and baked to perfection. I found this recipe on a box of corn flakes years ago and it quickly became a family favorite. You can “make it your own” by adding herbs or spices that your family enjoys.

Ingredients

  • 7 cups corn flakes, crushed to equal 1¾ cups

  • 1 egg

  • 1 cup milk

  • 1 cup flour

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 3 lbs chicken pieces, rinsed and dried

  • 3 Tablespoons butter, melted

Directions

  • Preheat oven to 350 degrees
  • Either grease a baking pan or line it with foil
  • Place crushed corn flakes in a shallow dish.
  • In a flat bottom dish, beat eggs and milk slightly.
  • Add flour, salt and pepper and mix until smooth.
  • Dip chicken into batter.
  • Roll the batter covered chicken into the crushed corn flakes.
  • Place chicken on prepared pan.
  • Drizzle with melted butter.
  • 10 .Bake for 1 hour or until done.
  • Do not cover or turn chicken while baking
