Who doesn’t like crispy chicken? This juicy, lip smackin’ good chicken is smothered in crushed corn flakes and baked to perfection. I found this recipe on a box of corn flakes years ago and it quickly became a family favorite. You can “make it your own” by adding herbs or spices that your family enjoys.
Double Crispy Chicken

7 cups corn flakes, crushed to equal 1¾ cups
1 egg
1 cup milk
1 cup flour
½ teaspoon salt
¼ teaspoon pepper
3 lbs chicken pieces, rinsed and dried
3 Tablespoons butter, melted
Directions
- Preheat oven to 350 degrees
- Either grease a baking pan or line it with foil
- Place crushed corn flakes in a shallow dish.
- In a flat bottom dish, beat eggs and milk slightly.
- Add flour, salt and pepper and mix until smooth.
- Dip chicken into batter.
- Roll the batter covered chicken into the crushed corn flakes.
- Place chicken on prepared pan.
- Drizzle with melted butter.
- 10 .Bake for 1 hour or until done.
- Do not cover or turn chicken while baking
