Cream Cheese Spritz Cookies

It’s been over 50 years, and I still reminisce of my Mom making these cookies at Christmastime. She would add red food coloring to some of the batter and green to the next batch. Some she baked without color but ALL were decorated by us kids, with colored sugar or little silver candy dots. I often wonder if she was aware that she was creating wonderful memories for her 10 children. This was one of my Mom’s recipes and I still make them each Christmas. They just melt in your mouth.

Ingredients

  • 8 ounces cream cheese, softened

  • 1 cup butter, softened

  • 1cup sugar

  • 1 1/2 teaspoon vanilla extract

  • 2 cup flour

Directions

  • Preheat oven to 350 degrees.
  • Beat cream cheese, butter, sugar and vanilla until thoroughly blended.
  • Gradually add the flour and mix until blended.
  • Refrigerate the dough for 20 minutes
  • Press through a cookie press onto an ungreased cookie sheet
  • Bake for 12 to 15 minutes.
  • Makes 54 cookies

Notes

  • The original instructions were to bake these cookies on an ungreased cookie sheet. I want to mention that I line my cookie sheets with parchment paper because I can slide the entire sheet of cookies off that hot pan and onto the cooling rack, immediately after taking them from the oven. This is important because high fat cookies, such as these, will continue to bake and quickly burn if they remain on the hot cookie sheet.
