Cowboy Caviar

This is one of those appetizers that you just can’t stop eating. I serve it with scoop style tortilla chips.

Ingredients

  • 15 oz. can black-eyed peas, rinsed and drained

  • 15 oz. can black beans, rinsed and drained

  • 15 oz. can whole kernel corn, drained

  • ½ c. chopped onion

  • ½ c. green pepper, chopped

  • 4 oz. can diced jalapeno peppers

  • 14.5 oz. can diced tomatoes, drained

  • 1 c. Italian salad dressing

  • ½ tsp. garlic salt

Directions

  • Combine all ingredients in a bowl, cover and refrigerate overnight.
  • Serve with taco chips (and sour cream if desired.)
