If you’ve never tried Collard Greens, I recommend you give them a try. I’ve searched for the best recipe and so far, this is my favorite. I do add a few strips of cooked bacon for an extra smoky flavor.
Collard Greens
Course: Ethnic Dishes, Side Dishes, VegetablesServings
4
servingsIngredients
2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 -32 ounce containers chicken broth
3 lbs collard greens, cleaned and trimmed
1/3 cup vinegar
2 T. white sugar
1 ½ t. salt
¾ t. black pepper
Directions
- Combine onions, ham hocks , garlic and chicken broth in stockpot.
- Cook over medium heat until meat falls off the bone (approx 2 hours).
- Remove the ham hocks from the pot, chop up the meat and return it to the pot.
- Add in the collard greens, vinegar, sugar, salt and pepper and simmer until greens have reached desired tenderness (approx. 2 more hours.)
Notes
- At step #4, I like to add 4 slices fried bacon, crumbled and 1/8 teaspoon of red pepper flakes
