Collard Greens

If you’ve never tried Collard Greens, I recommend you give them a try. I’ve searched for the best recipe and so far, this is my favorite. I do add a few strips of cooked bacon for an extra smoky flavor.

Ingredients

  • 2 sweet onions, finely chopped

  • 2 smoked ham hocks

  • 4 cloves garlic, finely chopped

  • 3 -32 ounce containers chicken broth

  • 3 lbs collard greens, cleaned and trimmed

  • 1/3 cup vinegar

  • 2 T. white sugar

  • 1 ½ t. salt

  • ¾ t. black pepper

Directions

  • Combine onions, ham hocks , garlic and chicken broth in stockpot.
  • Cook over medium heat until meat falls off the bone (approx 2 hours).
  • Remove the ham hocks from the pot, chop up the meat and return it to the pot.
  • Add in the collard greens, vinegar, sugar, salt and pepper and simmer until greens have reached desired tenderness (approx. 2 more hours.)

Notes

  • At step #4, I like to add 4 slices fried bacon, crumbled and 1/8 teaspoon of red pepper flakes
