When I was a little girl, in the summertime, we would have family reunions at a park. Everyone would bring a dish or two and of course, a sweet treat. My Aunt Lorraine always brought these bar cookies. She’s gone now, but her recipe lives on!
Chocolate Crunch Cookies

2/3 cup butter
½ cup light corn syrup
1 teaspoon salt
3 teaspoon vanilla
1 cup brown sugar
4 cups oatmeal
12 ounces chocolate chips
½ cup chopped walnuts
Directions
- Preheat oven to 425 degrees
- Grease a 9×13 inch pan
- Melt butter in a large pan on low flame
- Add corn syrup, salt, vanilla, brown sugar and stir well
- Remove from stove, add the oatmeal and mix well.
- With a damp spatula, press into the prepared pan.
- Bake for 10 minutes.
- Remove from oven, sprinkle on the chocolate chips and return to the oven for 3 minutes.
- Remove from oven and quickly spread the melted chocolate chips like frosting.
- 10. Sprinkle the walnuts on top of the “frosting”.
- 11.While still warm, cut the cookies into serving size pieces and when cooled, cut them again.
