Chocolate Crunch Cookies

When I was a little girl, in the summertime, we would have family reunions at a park. Everyone would bring a dish or two and of course, a sweet treat. My Aunt Lorraine always brought these bar cookies. She’s gone now, but her recipe lives on!

Chocolate Crunch Cookies

Ingredients

  • 2/3 cup butter

  • ½ cup light corn syrup

  • 1 teaspoon salt

  • 3 teaspoon vanilla

  • 1 cup brown sugar

  • 4 cups oatmeal

  • 12 ounces chocolate chips

  • ½ cup chopped walnuts

Directions

  • Preheat oven to 425 degrees
  • Grease a 9×13 inch pan
  • Melt butter in a large pan on low flame
  • Add corn syrup, salt, vanilla, brown sugar and stir well
  • Remove from stove, add the oatmeal and mix well.
  • With a damp spatula, press into the prepared pan.
  • Bake for 10 minutes.
  • Remove from oven, sprinkle on the chocolate chips and return to the oven for 3 minutes.
  • Remove from oven and quickly spread the melted chocolate chips like frosting.
  • 10. Sprinkle the walnuts on top of the “frosting”.
  • 11.While still warm, cut the cookies into serving size pieces and when cooled, cut them again.
