Bruschetta

My good friend Marsha shared this recipe with me several years ago. I have served it at several parties and everyone loves it. It is especially good when you have a garden full of vine ripened tomatoes, especially those sweet little cherry tomatoes. Yum! Be sure to use a good quality wine vinegar for the utmost flavor.

Ingredients

  • 3-4 cloves garlic, chopped fine

  • 1 Tablespoon red wine vinegar

  • Diced fresh tomatoes (about 3 cups)

  • 3 Tablespoons olive oil

  • Salt & pepper to taste

  • Chopped fresh basil

Directions

  • Mix well and let marinade for a few hours.
  • Serve on garlic toast with bits of fresh mozzarella cheese.

Notes

  • I often add chopped Kalamata olives… just because we like them so much!
