My good friend Marsha shared this recipe with me several years ago. I have served it at several parties and everyone loves it. It is especially good when you have a garden full of vine ripened tomatoes, especially those sweet little cherry tomatoes. Yum! Be sure to use a good quality wine vinegar for the utmost flavor.
Bruschetta

3-4 cloves garlic, chopped fine
1 Tablespoon red wine vinegar
Diced fresh tomatoes (about 3 cups)
3 Tablespoons olive oil
Salt & pepper to taste
Chopped fresh basil
Directions
- Mix well and let marinade for a few hours.
- Serve on garlic toast with bits of fresh mozzarella cheese.
Notes
- I often add chopped Kalamata olives… just because we like them so much!
