These are my hubby’s favorite brownies…very moist and fudge like. No need to wait for room temperature ingredients, so you can whip up this treat at the last minute This recipe is stirred by hand…no electric mixers.
Brownies (Fudge like)

10 Tablespoons butter
1 1/4 c. sugar
¾ c + 2 T. unsweetened Cocoa powder
¼ t. salt
½ t. vanilla extract
2 cold large eggs
½ c. flour
2/3 c. pecans or walnuts, chopped (optional)
Directions
- Use a rubber spatula or wooden spoon for this recipe (no electric mixer).
- Preheat oven to 325 degrees.
- Line the bottom and sides of a 8” square baking pan with parchment paper, leaving sides overhang.
- Combine the butter, sugar, cocoa and salt in a medium heatproof bowl and set the bowl in a wide skillet of barely simmering water. Stir until the butter is melted and the mixture is smooth. Remove the bowl from the skillet and set aside briefly until the mixture is only warm, not hot.
- Stir in the vanilla.
- Add eggs, one at a time stirring vigorously after each one.
- When the batter looks thick & shiny and well blended, add the flour and stir until you don’t see any more flour. Then beat vigorously for 40 strokes.
- Stir in the nuts and spread evenly in a lined pan.
- Bake until a toothpick plunged into the center emerges slightly moist with batter, 20-25 minutes.
- Remove from the oven and cool on rack.
- 10. Cut into 16 squares.
