My youngest son John came home with this recipe several years ago. It’s been one of our family favorites ever since.

Bananas Foster

Ingredients

  • 4 Tablespoons butter

  • ½ teaspoon cinnamon

  • 4 bananas, cut lengthwise

  • 1 cup brown sugar

  • 4 Tablespoons banana liquor

  • 4 scoops ice cream

  • ¼ cup rum

  • ½ cup pecans or walnuts (optional)

Directions

  • In a 10” skillet, melt butter.
  • Add cinnamon, sugar and banana liquor and simmer for 4 minutes.
  • Add the bananas and pecans/walnuts and remove from stove.
  • Add rum and carefully ignite with a long matchstick. Cover with lid to extinguish flames.
  • Scoop over ice cream and serve.

Notes

  • May garnish with a dollop of whipped cream and a sprinkle of cinnamon if desired.
