Apple Slices

If you like good, old fashioned apple slices, this recipe is a “must have”. The crust is perfectly balanced…tender, yet crunchy. The apple filling is divine. These remind me of the apple slices I enjoyed as a little girl.

Ingredients

  • “”Dough””

  • 4 cups all purpose flour

  • 1 teaspoon salt

  • 1 1/3 cup shortening (or lard, if you don’t mind clogged arteries)

  • 4 egg yolks

  • 2 Tablespoons lemon juice

  • ½ cup cold water to start+1/4 cup more if necessary

  • Sprinkle of cinnamon

  • “”Filling””

  • 10 to 12 cups peeled and sliced green apples, sliced approx.1/2 inch thick

  • 2 cups sugar

  • 4 Tablespoons flour

  • 1 teaspoon cinnamon

  • Dash of nutmeg

  • 1 Tablespoon of butter

  • Glaze
    1 cup powdered sugar
    2 Tablespoons melted butter
    1/2 teaspoon vanilla
    2 Tablespoons milk

Directions

  • Preheat oven to 400 degrees
  • Peel and slice the apples and place in a large bowl. with 2 cups sugar,
  • To the apples add 2 cups sugar, 4 Tablespoons flour, 1 teaspoon cinnamon and a dash of nutmeg. Stir well and set aside.
  • To make the dough, place the flour, salt, dash of cinnamon and shortening in another bowl. Using a pastry cutter, cut in the shortening, until course crumbs are formed. Beat the lemon juice, egg yolks and water together and add to the flour mixture. Stir until combined. Divide dough in half. Roll out or pat ½ of the dough into a half sheet pan. Spread the sliced apple mixture evenly over the crust. Be sure to add the sugary juices from the bowl. Dot apples with 1 Tablespoon of butter. Roll out second ball of dough and cover the apples. Seal top and bottom of crust like you would with a pie. Poke several holes in the crust to allow steam to escape. Don’t omit that step or you’ll end up with mushy apple slices. Bake at 400 degrees for 40 minutes. Cool and then glaze.
  • To make the glaze, put the powdered sugar, melted butter, vanilla and milk in a bowl and whisk until the glaze is free of lumps.
  • Brush the glaze over the cooled apple slices. Refrigerate until glaze is set and ready to serve.
