Apple Cake

My old friend Maureen Frost used to bring this cake to work to share with the ladies. We would gobble it up in no time at all. Its moist and tasty and doesn’t need frosting. I’m certain she’s up in heaven baking this cake for her hubby Jim and son Greg.

Apple Cake

Ingredients

  • 4 cups diced apples

  • 2 cups sugar

  • 1 teaspoon cinnamon

  • ½ cup vegetable oil

  • 2 eggs, well beaten

  • 2 teaspoon vanilla

  • ¾ cup walnuts

  • ¾ cup raisins

  • 2 cup flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

Directions

  • Mix the first 7 ingredients with a wooden spoon.
  • Add the dry ingredients, mixing well.
  • Pour into greased and floured 9×13” pan.
  • Bake at 350 degrees for 60 minutes.
  • Cool completely before serving.
  • No frosting needed for this cake…it’s that good!

Notes

  • I use pecans rather than walnuts due to allergies and I add 1/8 teaspoon nutmeg just because I like nutmeg with apples.
