Years ago I moved into an apartment building that also housed 5 couples that were senior citizens. Well, I had 2 young children so we had nothing in common, but the old folks sure loved to stop me in the hall and chat and fuss over my kids. I never knew my grandparents and these folks were sweet as could be, so I thought, hey…I’ll have a “Koffee Klutch” and invited them all over for coffee and a treat. This was one of their favorite recipes that was shared with me by Ester Ledbetter, one of the senior tenants in the building. The “Koffee Klutches” became a daily thing, until sadly, some of them passed on or went to a nursing home. Now, almost 50 years later, I’m a senior and I still make this cake, with the fondest memories of the folks on Campbell street and all the interesting tales they told.
Apple Bavarian Torte

• 1/2 cup butter
• 1/3 cup white sugar
• 1/4 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1 (8 ounce) package cream cheese
• 1/4 cup white sugar
• 1 egg
• 1/2 teaspoon vanilla extract
• 6 apple – peeled, cored and sliced
• 1/3 cup white sugar
• 1/2 teaspoon ground cinnamon
1/8 teaspoon nutmeg
• 1/4 cup sliced almonds
Directions
- Preheat oven to 450 degrees
- Cream together butter, sugar, vanilla, and flour. Press crust mixture into the flat bottom of a 9-inch spring form pan. Set aside.
- In a medium bowl, blend cream cheese and sugar. Beat in egg and vanilla. Pour cheese mixture over crust. Toss apples with sugar and cinnamon. Spread apple mixture over all.
- Bake for 10 minutes. Reduce heat to 400 degrees and continue baking for 25 minutes. Sprinkle almonds over top of torte. Continue baking until lightly browned. Cool completely before removing from pan. Refrigerate until 30 minutes before serving.
