American Potato Salad

What could possibly be more American than a side of creamy potato salad? Mom used to make a HUGE bowl of this for our summertime family reunions and there were never any leftovers. My uncles would mosey over to the bowl and fill their plates like it was their last meal. Of course Mom was tickled that her brothers enjoyed her cooking, but I’m not so sure their wives felt the same way. Anyway, I made a few minor changes…Mom always used salad dressing (Miracle Whip) which is my favorite, but my family prefers mayo, so mayo it is. Also, Mom used to slice the eggs and place them on top for decoration, but then only a few folks got to enjoy them. So, I chop them up and add them to the mix so everyone can partake. Lastly, Mom sprinkled sweet paprika on top for decoration. I add smoked paprika to the “sauce” which gives it a hint of smokey goodness. Feel free to add some of your favorites, such as crumbled up bacon, chunks of red bell peppers or whatever your family enjoys. I know some of the ingredients in the sauce are different than what you would normally find in potato salad, but trust me…its yummy!

American Potato Salad

Ingredients

  • 1 ½ pounds red potatoes

  • 2 hard boiled eggs, chopped

  • ¾ cup chopped celery

  • ½ cup finely minced onion

  • 1 cup mayonnaise

  • 3 Tablespoons milk

  • 3 heaping teaspoons prepared yellow mustard

  • 1 Tablespoon ketchup

  • ¾ teaspoon salt

  • ¼ teaspoon pepper

  • 1/8 teaspoon smoked paprika

Directions

  • Boil potatoes in their skins until fork tender. Remove from stove and immediately rinse in cold water for several minutes to stop the cooking.
  • When potatoes have cooled down, peel and slice into ¼ inch pieces and place into a big bowl.
  • Add the celery, onions and eggs.
  • In a separate bowl, prepare the “sauce” by mixing together the mayonnaise, milk, mustard, ketchup, salt, pepper and paprika.
  • Pour the sauce over the potato mixture and gently stir until evenly coated.
  • Transfer to a serving dish, cover with plastic wrap and refrigerate until ready to serve.
